My husband and I have been fortunate enough to travel a lot this year. Most of our travel has been for work, but this trip was just for us. We heard fantastic things about Belize, but honestly, Nick could have just told me how fantastic the lime-butter popcorn would be and that alone would have sold me on El Pescador Resort.
Our trip started a little shaky when we found out our 6am flight out was CANCELLED after arriving at DCA at 4 AM that morning. Lucky for us spending 2 hours on the phone with customer service reps paid off. We got out of DC and landed in Belize only 1 hr later than originally scheduled. The flight was exciting with the worst turbulence that I’ve ever experienced. Needless to say, I was thankful to be greeted with a Belkin beer by the El Pescador staff at the airpot in Ambergris Caye.
Over 3 days of guided fishing, we explored some 400+ square miles of water. Nick and I caught our fair share of bonefish, had a good shot at tarpon and both had permit eat our fly. In the afternoons, El Pescador’s bar, Grand Slam, would open. Mariano would serve us our cocktail of choice and the aforementioned best-lime-popcorn-ever. Before dinner, we’d walk the beach to sight fish for tailing bonefish. It was an appetizer of humility followed by a feast of food at El Pescador. We hope to make it back there again.
